Yves has nearly 30 years of experience in the culinary industry, beginning as a commis tournant at the Michelin-starred Abbaye de Sainte Croix. In the first ten years, he benefitted from world-class training: he trained at the Professional Catering School VATEL 8 in Lyon and has since also attained his Level 3 Food Hygie...... Yves has nearly 30 years of experience in the culinary industry, beginning as a commis tournant at the Michelin-starred Abbaye de Sainte Croix. In the first ten years, he benefitted from world-class training: he trained at the Professional Catering School VATEL 8 in Lyon and has since also attained his Level 3 Food Hygiene certificate. He begun by working as a chef de partie and pastry chef in Canada, a chef de partie at three Michelin star Le Rosalp, Relais & Château in Switzerland, a sous chef in the 3 AA Rosettes-rated Le Talbooth Restaurant in Dedham, and then Head Chef at 3 AA Rosettes-rated Hollington House Restaurant and 4-star rated hotel Le Bristol Hotel in Berkshire and Switzerland respectively. He then worked as a private chef for billionaires Sir Anthony Bamford, Georg von Opel and Konstantin Kagalovsky, before becoming the Executive Head Chef for Sherlock Parties, a high end event contract catering company, and then the Interim Executive Head Chef for St Helen and St Katharine.
