He has lived in London his whole life but now lives in Edinburgh. He loves the restaurant scene there; small independent restaurants and access to fantastic produce. He loves using fresh Scottish produce, particularly using interesting vegetable varieties from favourite organic shops and different cuts of meat. His style fits into the term of 'Modern British', using different cooking methods but with a focus on taste above all.
