About the Chef

Rex graduated from college and went straight into the catering industry gaining plenty of experience working his way through every section at 'The Factory House' - the Flagship Restaurant of 'Davy's Wine Bar' company for just over a year. More recently, Rex is currently working at the well known 'Rivington Bar & Grill'...... Rex graduated from college and went straight into the catering industry gaining plenty of experience working his way through every section at 'The Factory House' - the Flagship Restaurant of 'Davy's Wine Bar' company for just over a year. More recently, Rex is currently working at the well known 'Rivington Bar & Grill' in Shoreditch cooking simple British food to a great standard since March 2014. Since then, he also managed to plan and run his first pop-up restaurant in a small cafe in Greenwich and held 3 more throughout the year including a special 6 course tasting menu that was held for a Filipino Charity known as 'Bantay Bata 163'. Rex specializes in Contemporary Filipino cuisine which takes traditional flavors and dishes of the Philippines and presents them in a modern way with new ideas and techniques. This is Rex's true passion as a Chef with hopes and aims to popularize Filipino Cuisine within London and the UK.
