Chef Rex De Guzman made the decision to pioneer Filipino cuisine in London and the UK ever since he planned his first pop-up restaurant at the ‘Plum Tree Cafe’ in Greenwich on March 2014 at just age 21. As a British born Filipino, Rex developed a natural curiosity into his heritage and saw that food was his way to learn more about his roots and culture. In 2016, Chef Rex planned and embarked on a 3 month culinary research expedition to the Philippines. The project contributed to assisting Rex on his journey to gain an insight on regional Filipino cooking and the history and culture that surrounds the food. Shortly after completing his tour of the Philippines, Rex was inspired to direct and cook an 8 course Contemporary Filipino Tasting Menu based on Filipino regional specialties for charity which raised £1400 for ‘Demelza - Hospice for Children’ and along with this, plans to release a mini documentary series in 2017 of Rex's research and experience in the Philippines. Chef Rex is currently making plans for a Filipino street food stall in 2018 with intentions to eventually develop the business into an establishment. Read all Hide
