Indeed, food is central to nearly everything that happens on the Island and for many Sicilians including for Pietro, the earliest memories of childhood involve following Nonna (Grandma) around the kitchen as she prepared meals, not always lavish affairs, but always great food prepared with passion. This is how Pietro developed his love for cooking and how he realised that food is so much more than just about eating, but pivotal to holding together both family and community. Sicilian and Italian cooking is all about simplicity; using the freshest ingredients combined cooking techniques to maximise flavour. Its influences derive from Asia, Africa and Europe and he likes to think that this eclectic mix reflects the fusion of dishes and ingredients that characterise his kitchen. Cooking is not just about following recipes from one country or cuisine, but rather about using the best ingredients to make the finest food.
