The sun was setting on the Disco era and, despite having a cracking singing voice AND some great dance moves, the then teenage Paul decided that a career in catering may be a wiser one than life as a Disco King. So, having attended Thomas Danby College in Leeds (the same one as Marco Pierre White), Paul packed away his legwarmers and unrolled his knives… The early professional life of any chef is a similar story – crazily long and unsociable hours, heaving heavy pans, and bleeding feet – and Paul’s was no different. Keen to move on and up (and leave the bleeding feet behind), Paul started his professional ascent from commis… to sous… to head… to where he is today. Having worked as Head Chef in many restaurants, several with Michelin Stars and AA Rosettes, Paul has worked as a director of the UK’s first website for culinary professionals and as a consultant for companies including Whitbread PLC, David Lloyd Leisure, Princess Foods, Major Food Stocks, Russell Hulmes and The Dorchester in London. In 2003, Paul joined a prestigious Catering Company as Group Executive Head Chef. During this time, Paul had a mixed brigade of 15 full-time, and almost 40 part-time, catering staff under his direct control and was responsible for all Dine outlets.
