About the Chef

Morganne discovered enthusiasm for food in her mother's kitchen as a small child. That is where she learnt to cook tasty and gratifying meals from cheap cuts for a large family. Morganne discovered enthusiasm for food in her mother's kitchen as a small child. That is where she learnt to cook tasty and gratifying meals from cheap cuts for a large family. When she was 15, she was taken under the wing of family-run, french, a la carte restaurant, her education really began. Notable skills she acquired here are butchery, bakery, patisserie and sauce-making. 10 years furthering her knowledge across the globe have enabled Morganne to become a professional and dedicated chef with a keen interest in food ethics and the quality of ingredients. She spent time cooking mainly in Wales at first, before travelling to France, Indonesia and as far as New Zealand. Her education led her to lead a mainly vegetarian lifestyle with a deep appreciation for the life, death and enjoyment of animals in the right place in her diet. This approach has furthered her understanding of nutrition, using alternative ingredients and of how flavours are impacted by various stages of animal rearing, vegetable growing and their preparation. She has since undertaken foraging courses and learned to prepare from wild foods including beginning to make her own wine. From her classic, carnivourous roots to her more subtle, balanced, ingredient focused present, Morganne appreciates and understands food in many of its forms and delights in delivering delicious and high quality food.
