He loves preparing healthy and feel-good food, which is essential to leading a healthy lifestyle. His ethos to food philosophy has always been to keep it fresh, seasonal and local to achieve the best possible flavour, resulting in fantastic food. He was told in early school life that he had a creative flair and he had always been interested in art, whether it be modern life subjects by Manet or local street painters. He creates masterpieces by expressing the way he feels, by channeling his energy onto the plate using colours, shapes and textures.
