In this position, Matthew was responsible for the training, quality & profitability of numerous sites; as well as overseeing successful openings across all corners of the UK. During this time, Bistrot Pierre secured investment from a Private Equity group & now have over 20 sites with an ambitious roll-out plan. Prior to this, Matthew has worked in independent gastro-pubs in Norfolk, cafés & restaurants in the bustling Australian cities of Sydney & Melbourne; as well as fine dining establishments in the East Midlands. Matthew loves to cook French classics from succulent Duck confit to fresh off the boat Bouillabaisse; as well British traditions cooked to perfection- Sunday roast with all the trimmings. Matthew has managed teams of international chefs in multi-outlet operations including hotel banqueting, gastro-pub & Brasserie catering for up to 1000 covers. After working as a chef in the catering industry for over 20 years across many different sectors, Matthew set-up his own consultancy business in 2017. He has recently re-launched a gastro-pub food offering; including wood-fired pizzas - and took the concept onto his own pop-up events across the midlands.
