When asked where I come from, I cannot say just “Italy”. Born in the South and raised in the North my heart beats for both the simplicity and freshness of Puglia and the indulgent comfort of the North. My childhood is rich with memories of excitedly joining my nonno in his butchery, making handmade pasta with my nonna an...... When asked where I come from, I cannot say just “Italy”. Born in the South and raised in the North my heart beats for both the simplicity and freshness of Puglia and the indulgent comfort of the North. My childhood is rich with memories of excitedly joining my nonno in his butchery, making handmade pasta with my nonna and riding through the olive fields with my other nonno just before harvest. My passion for food, how it is both produced and prepared was born in the heart of Italy. As I matured my desire to explore lead me to London where my eyes have been opened to all the exciting flavours and cultures only on offer in a city like this. I threw myself in to any apron that could teach me something new; from British Food, to Fine Dining and Pizza, working my way up in companies such as Soho House, and most recently Vacherin.
