The work experience gained over the years, in particular at her Restaurant in Oxford, contributed to her professional training and also increased her skills and technique. The Neapolitan upbringing, which gave her an enduring fascination with the markets and street food wonders of very different cultures, got her travelling at a very young age, and she has over the course of her life travelled throughout South East Asia. Her travels eventually landed her in Saigon where she lived for four years. There was, in particular, a magic to the road-side food sellers which left a deep, lasting impression on her. Her Vietnamese odyssey, combined with her lifelong passion for cooking, inspired her Vietnamese cuisine, she is not attempting to create a fusion of food traditions, Luisa's Vietnamese cuisine is authentic, healthy, fresh and colourful, it's her homage to the people, places, and of course food that is Vietnam. The seasonal freshness of locally-grown produce is at the heart of her ethos. She only uses naturally-raised meats because she believes that makes everything taste better. She firmly believe that genuine, tasty food must remain faithful to the ingredients and culinary traditions. Both her Italian cuisine and her Vietnamese cuisine are bursting with flavoursome authenticity, thanks to her loyalty to the ingredients and traditions of those countries, despite her proclivity for personal innovation and creativity.
