About the Chef

Dan has been passionate about food his whole life: having taught himself to cook as a young boy by reading cookery books and collecting recipes from magazines, he graduated from renowned Leith’s School of Food and Wine in 2014. Most recently he worked as a fine-dining Chef for the Chief Executives and Directors at Barclays…... Dan has been passionate about food his whole life: having taught himself to cook as a young boy by reading cookery books and collecting recipes from magazines, he graduated from renowned Leith’s School of Food and Wine in 2014. Most recently he worked as a fine-dining Chef for the Chief Executives and Directors at Barclays’ world headquarters and Ernst & Young. During his time as a chef, Dan has covered all of a kitchen’s sections, from larder to pastry section, which has made him into a versatile, all-round chef. An extensively travelled chef, he has learned a global range of cooking techniques, even taking a culinary course whilst on his honeymoon in Borneo! Growing up in a small town close to the Hertfordshire countryside, he spent many days taking country walks throughout the year and learned of the places that would offer forageable foods such as wild garlic, elderflower, lemon balm and blackberries. Some of Dan's menu's are heavily influenced by the country and particularly game season, his favourite time of the year. A distinguishing feature of Dan’s is that he puts his heart in each dish he prepares: he derives the greatest satisfaction from seeing people enjoy his food. Dan favours seasonal ingredients, enjoys foraging and feels strongly about animal welfare, sourcing his meat only from reliable sources.
