Chef Craig Swallow acquired his certification in 2006 from Le Cordon Bleu at the California Culinary Academy in San Francisco. Craig was born in York but was led by his family in the pursuit of gold and sunshine to California in the United States at the young age of nine. Having discovered no gold in California nor silve...... Chef Craig Swallow acquired his certification in 2006 from Le Cordon Bleu at the California Culinary Academy in San Francisco. Craig was born in York but was led by his family in the pursuit of gold and sunshine to California in the United States at the young age of nine. Having discovered no gold in California nor silver in Nevada by the time he was 24, he decided to take up one of his passions as a career and move back and forth between continents working as a chef. He has worked in numerous kitchens, serving various types of cuisine in both the US and England. He has experience in Rosette, fine dining, bistros, American diners, gourmet mobile catering, high volume banquets, smokehouses, pubs and fast food. He has acquired a Level 2 Hygiene Certificate (2015) and a Level 3 Hygiene Certificate (2016) and worked all positions in a kitchen brigade, including Head Chef. Read all Hide
