About the Chef

Born in Derry City, Ireland, food was the centre of our Columba's upbringing. His interest in ingredients started at an early age with trips to the beaches of Donegal, collecting molluscs and dulce (seaweed), fishing, and baking good apple tarts with his grandmother. He knew from an early age that cooking was going to be h…... Born in Derry City, Ireland, food was the centre of our Columba's upbringing. His interest in ingredients started at an early age with trips to the beaches of Donegal, collecting molluscs and dulce (seaweed), fishing, and baking good apple tarts with his grandmother. He knew from an early age that cooking was going to be his life. Post College, Columba's career has taken him to Park-lane Hilton London, the Shelbourne Hotel Dublin & Maxims Paris, from fabulous luxury hotels, Michelin rated restaurants, upscale contract catering to even being a Private chef in Los Angeles! Baking bread is a true passion, making an amazing bread basket or display with good butter & Dips gives him so much pleasure and his customers too. He uses very old bread starter, it gives flavour and balance to breads especially his sour dough or Irish Batch bread. He loves old fashioned breads using ancient grains and some tea breads also - like Irish Treacle bread, or Barn-Brach, all a special treat for your dinner party, lovingly prepared for you to enjoy. Modernist cuisine has always excited Columba, and the Nordic movement has been a joy to research and cook, but his real love is contemporary European style.. Aside from his culinary career, he enjoys the outdoors, Irish setters and loves to fly fish in Ireland. Spending time with his wife and children gives him joy beyond food and he loves to share his food passions with them. Columba always enjoys browsing the food markets of London and engaging in interesting food projects such as Edible Opera, Denim n Dine and working with chef friends for fun.. Read all Hide
