My star dish is 7 hour slow cooked lamb in rose with anchovies and rosemary. Served with grilled radicchio, herbed orzo and greens. Simple yet delicious.
My 3 favourite ingredients... I love greens (cabbages, leaves, lettuces etc) so versatile, and such variety of flavours. Watercress particularly-it's a forgotten flavour. Great olive oil lifts any dish. Herbs-add so much flavour. I love lobster clams-fresh flavours of the sea. Pasta-my guilty pleasure. Favourite meat to cook with is lamb. Roast chicken is my favourite thing to eat in the whole world!
I am a private chef because I like to offer a bespoke service when cooking and create totally unique menus and dining experiences for my clients. I love working closely with clients and being able to cook on a more intimate level and in a variety of settings and locations. It is a challenge as a private chef to cook in different environments and with different people-I love this! And it's very rewarding to cook for people on a personal level.
