Congratulations to chef Terry Stewart on his successful validation dinner. His validation took place on the 6th of January in Brighton. The role of the jury members was to try the private chef dining experience and evaluate the menu prepared by the chef.
Terry Stewart has a vast amount of experience in the catering industry. He first developed his passion when he was about eight years old, and was curious about how his mother created such delicious meals in the kitchen. Over the years he continued to hone his skills in the kitchen and went on to work in some of the most prestigious restaurants in London, working alongside Michelin starred chefs. He has worked as a Senior Chef at “The Collection” on South Brompton Street, “60 St James” at Green Park, and “Café Nico” at Hyde Park. He was also Head Chef at “Pasha” for several years where he was able to hone his skills in Moroccan and North African cuisine. Terry Stewart now has more than 23 years of experience in the catering industry. Apart from North African cuisine Terry also loves to cook classical food with a modern twist and pan Asian style dishes. His favourite ingredients are garlic, chilli, thyme, rosemary and tarragon.
Smoked salmon terrine, cucumber salad, horseradish cream and tomato bread
Slow cooked shoulder of lamb, with toasted pistachio, preserved lemon quinoa and textures of cauliflower
Vegetarian option: Sun blushed tomato polenta with baby vegetables and shallot puree
Dark chocolate delice, salted caramel, praline crumble vanilla ice cream

The chef as very thorough in finding out likes and requirements before the the evening ran so smoothly because of how intuitive he was with us, our guests and waking little ones.. Terry explained all the meals and how the evening would run leaving just the right amount of time between courses. The food was amazing. Terry created an amazing and memorable evening for his Validation Dinner. He cooking was of extremely high standard, with carefully constructed and refined dishes with a wide range of delicious flavours. He was very intuitive and attentive to the needs of his guests, and was a pleasure to host all around.
