Congratulations to Sam Shone on his successful validation dinner. His validation took place on the 16th of November in Brighton. The role of the jury members was to try the private chef dining experience and evaluate the menu prepared by the chef.
Before his culinary exploits, Sam worked in publishing but in 2016 he left this behind and started training at the prestigious Leith’s School of Food and Wine in London. Sam has an array of impressive experience at renowned vegetarian restaurant ‘Ceremony’ and at Michelin starred Ockenden Manor in Sussex. He describes his style as Modern, beautiful and un-fussy noting his appreciation for depth of flavour and varied textures. Sam works to create individual, bespoke menus that make experiences unique and memorable. He believes that simplicity is key and the best dishes balance flavour and texture without over-shadowing the quality and natural flavours of the main ingredient. Sam prides himself in a relaxed style of dining that does not leave guest hungry with small portions but instead impressed by his uncomplicated culinary creations.
