Validation Dinner: Romuald Brunelle

Congratulations to Chef Romuald Brunelle on his successful validation dinner. His validation took place on the 19th of January in London. The role of the jury members was to try the private chef dining experience and evaluate the menu prepared by the chef.

The Chef

Romuald’s passion for food is evident in his cooking; he is a self-confessed perfectionist, always putting the client at the heart of his dishes and taking the upmost pride in his work. Romuald specialises in in French fine dining but has a breadth of experience in Italian, gastro and modern British cuisine and always strives to source the finest seasonal, local and organic ingredients.

The Menu

Starter

Spring onion risotto with chilled avocado purée

Main

Pan seared chicken supreme served with fondant potato, caramelised shallots, carrot purée and red wine jus

Dessert

Mousse au chocolat with fresh fruits and vanilla tuile
