Validation Dinner: Oliver Snook

Congratulations to chef Oliver Snook on his successful validation by the La Belle Assiette Jury!

Congratulations to chef Oliver Snook on his successful validation dinner. His validation took place on the 6th of June in Brighton. The role of the jury members was to try the private chef dining experience and evaluate the menu prepared by the chef.

Oliver is a chef with over 20 years’ experience in many different types of food and catering. He has worked in Michelin starred restaurants and has a no-nonsense approach to food, using the best ingredients simply and effectively to provide excellent food to a high standard. He is always eager to understand the needs of the client to give them the dining experience that best suits them, using the skills he has built up over the years. With extensive experience, from private homes to large scale catering, he has an understanding of how to work within different environments and to very different briefs. He has great personal skills and is always well presented.

Appetizer

Wild mushroom broth, tarragon dumplings

Starter

Duck plate: home cured breast, potted leg, liver pate, pickled prunes

Main course

Sea bass, braised fennel, cavolo nero, crushed new potatoes

Dessert

Rhubarb cheesecake, rhubarb compote, pistachio praline

  • Oliver arrived in good time, fully prepared and looking forward to the event. Oliver offered a menu of mushroom broth, gin sorbet, duck, sea bass and rhubarb dessert, discussed and agreed before the date. The plates were varied, colourful and packed with flavour. I particularly enjoyed the sea bass served on cavolo nero and crushed new potatoes. The dessert was a superb combination of tart rhubarb compote with a creamy, light rhubarb cheesecake and a sweet, crunchy pistachio praline. You need to taste this. To dine at home, with a chef to prep, cook and clean afterwards felt decadent and fuss-free.

Oliver created an exceptional meal for his Validation Dinner. Each dish was perfectly cooked, and the special touches he included made the meal even more special. His range of culinary experience shone through and he was an absolute pleasure to host.
