Validation Dinner: Mark Apsey

Congratulations to Mark Apsey on his successful validation dinner. His validation took place on the 9th of November in Maidenhead. The role of the jury members was to try the private chef dining experience and evaluate the menu prepared by the chef.

The Chef

Mark Apsey is a chef with a wealth of experience having been head chef of numerous high end establishments across the UK. Having worked his way up the ranks in a handful of Michelin starred restaurants, Mark was promoted to be Alan Murchison’s Head Chef at L’ortolan; The only Michelin Starred Restaurant in his home town of Reading. More recently working in London as Head Chef for the experiential events designers Bompas and Parr, working on exciting events like the full relaunch of Häagen Dazs’ range of ice creams. He is innovative and created edible flavoured bubble mixture and an ice lolly that will not melt. Mark draws influence from French Cuisine, British Seafood, and Modern Gastronomy but his dairy intolerance has led him to experiment in order to match the milky equivalent. Mark is a hands on chef and can’t wait to get cooking for you!

‘I’ve never had a private chef to my home before, and was a bit uncertain about it all, but it proved to be such a relaxed and pleasant evening. We were blown away by the quality of the produce, the taste and presentation of each meal. The best part was that the kitchen was left spotless. It was the really the most perfect night!’
