Validation Dinner: Liam Dillon


Congratulations to Liam Dillon on his extremely successful validation dinner. His validation took place on the 8th February at his pub, The Boat Inn, Lichfield. The role of the jury members was to experience our private chef service and review our newly onboarded chef, Liam Dillon.

The Chef


After travelling in Australia, Liam took inspiration from the simplicity of the cuisine and loved their use of premium ingredients. This experience still heavily influences his style of cooking today as he doesn’t like to over complicate things. He firmly believes that with quality ingredients comes quality food. He also takes with him from his travels a love for seafood and shellfish which can be seen integrated into his menus. Liam’s versatile abilities allows him to adapt to any dietary requirements or specific requests that his clients have. This is what has helped him to become such an experienced chef being able to cater for everyone, no matter what the desire.

After working in some of London’s best kitchens he has returned to his hometown Lichfield, on his first solo adventure. This has led him down an exciting path. he has recently renovated and opened his own pub, The Boat Inn. He has decided to join La Belle Assiette and offer the charm and service from his pub into people’s homes to spread his talent far and wide. Liam’s next goal is to introduce his unique style of cuisine to locals and try to make them think outside of the box. Liam’s talent knows no limit and continues to grow.
