Validation Dinner: Jonathan Fais

Congratulations to chef Jonathan on his successful validation by the La Belle Assiette Jury!

Congratulations to chef Jonathan Fais on his successful validation dinner. His validation took place on the 11th of November in London. The role of the jury members was to try the private chef dining experience and evaluate the menu prepared by the chef.

The Chef

Jonathan started as a kid working in his uncle’s restaurant during school holidays. In 2008 decided to leave his 9 to 5 job, follow his passion, and become a professional chef. After improving his skills in some great restaurants in Italy, he moved to London in 2012. Here he learned more styles and techniques from all over the world, and mixed them with his Italian background. He is now based in London, and ready to wow you with his creative cooking.

The Menu

Amuse bouche
Leeks; parmesan foam, pink peppercorns and bonito

Pigeon breast, celeriac purée, pink lady, hazelnuts toast

Cold smoked monk fish, bacon sand, pumpkin and peppers purée, potato, apple and nori

Matcha madeleines, honey butter, smoked maldon salt

“The dinner was fantastic. Jonathan was incredibly professional and well-prepared. He didn’t require any assistance and just got on with the job adapting to my kitchen as he went. All the courses were delicious and of a high restaurant quality.”

Chef Jonathan Fais created an innovative menu which impressed the judges with its style and flavour. Each dish was extremely well-presented, reflecting his eye for detail. He had clearly put a lot of thought and attention into the menu.
