Validation Dinner: Dina Spencer

Congratulations to chef Dina on her successful validation by the La Belle Assiette Jury!

Congratulations to chef Dina Spencer on her successful validation dinner. Her validation took place on the 7th of November in Southampton. The role of the jury members was to try the private chef dining experience and evaluate the menu prepared by the chef.

The Chef

Dina started out in the culinary world at a young age and hasn’t looked back since. Right from the off, she threw herself into the kitchen lifestyle as a dessert chef. She then excelled herself by quickly moving through the rankings all the way to Head Chef. Dina always tries to refresh herself with new ingredients and techniques. Travelling the world bit by bit, tasting all she can and absorbing the classic foods from every culture. Her level of skill is displayed with a maturity and depth of knowledge for flavours from all cultures. Cooking in a closed kitchen or open kitchens is one thing. But Dina is also able to pass on that skill to clients with her cooking workshops, an ability that not all chefs possess. Dina is an exceptional chef with a charming personality, who just longs to share her art with the world.

The Menu

Pan seared scallops, Chorizo jam, pancetta, cauliflower puree, parmesan crisps, sage, white wine butter drizzle, breaded feta, pea & mint bites

Herb crusted lamb, Liquorice confit lamb cutlets, pommes anna, caramelised fennel & capers

Raspberry basil sorbet, Mint & dark chocolate dust, cucumber, peach jelly drops, meringue kisses, mixed oats & seed crumble bed

“What an amazing experience, Dina was fantastic from start to finish. A welcoming and friendly person, as well as an incredible chef, I can’t recommend her enough. All six of us were so impressed with her food, demeanour and absolute cleanliness when tidying up. What’s not to love, fantastic food cooked in your own home and zero washing up. A truly relaxing evening with friends that will be talked about for a long time! Thank you.” 

The jury were very impressed with Dina’s menu and service. The menu was carefully designed, and combined flavours wonderfully. Her dishes were beautifully presented on wooden boards, taking the dining experience to another level.
