Validation Dinner: Daniel Archer

Congratulations to chef Daniel on his successful validation by the La Belle Assiette Jury!

Congratulations to chef Daniel Archer on his successful validation dinner. His validation took place on the 3rd of November in Exeter, Devon. The role of the jury members was to try the private chef dining experience and evaluate the menu prepared by the chef.

The Chef

Dan is a chef based in Totnes, Devon. He can provide you with a bespoke dining experience for every occasion from beginning to end. Dan will help design the perfect menu for you. Having spent over 11 years in professional kitchens across the UK, not to mention his travels across the globe, Dan is well-versed in a huge array of cuisines. Take your pick; whatever takes your fancy.

The Menu

Starter
Braised Pigs Cheeks, Jerusalem Artichoke puree, Bulgar Wheat and Wild Mushrooms, Hazelnuts

Main
Roasted Venison Loin, Roasted Root Vegetables, Curly Kale, Saute Chestnuts, Brussel Sprouts and Bacon, Dark Chocolate Jus

Dessert
Rum and Cinnamon Baked Apples with Almonds and Raisins, Vanilla Crème Anglaise

“The dinner party was laidback and enjoyable. Daniel Archer put together an excellent menu for the four of us and can certainly cook great rustic food. Our venison was beautifully done and I’ll be after the recipe for his fabulous starter.

My only criticism was that the floor was left quite messy. Just something to think about next time!”

Chef Daniel’s ‘great rustic food’ put him in good stead with the jury. His wonderful presentation and flavours really impressed the judges.
