Validation Dinner: Columba Cassidy

Congratulations to Columba Cassidy on his successful validation dinner. His validation took place on the 25th of January in Buckinghamshire. The role of the jury members was to try the private chef dining experience and evaluate the menu prepared by the chef.

The Chef

Born in Derry City, Ireland, food was always a prominent part of Columba’s childhood. His interest in sourcing ingredients blossomed from an early age collecting molluscs and dulce, fishing, and baking good apple tarts with his grandmother. Pursuing his passion post college, Columba’s career took him to Park-lane Hilton London, the Shelbourne Hotel Dublin and Maxims Paris, from fabulous luxury hotels, Michelin rated restaurants, upscale contract catering culminating in an experience as a Private chef in Los Angeles! Baking bread is another string to his bow. Columba creates amazing bread baskets or displays with good butter & dips to whet the appetite of his guests. His culinary knowledge expanded to the Nordic movement which he enjoyed researching and cooking, Columba’s culinary creativity even led him to engage in interesting food projects such as Edible Opera, Denim n Dine and working with chef friends for fun.

Rare Angus Beef Filet pomme Roblochon espuma, crisp shallots, truffle oil

Starter

Pressed Romero Peppers, Goats Cheese, Sour Dough & Parmesan Crisp, Garden Herb Dressing, Hazelnut Leaves

Main Course

Spiced Duck Breast, Honey & Cumin Piccalilli Vegetables, Potato Gratin with Aged Parmesan, Merlot Cooking Juices

Dessert

Winter Spiced Poached Pear, Tarte Tatin, Vanilla Cream

 

‘Delicious food and an absolutely perfect evening. Each dish was creative and a treat for the tastebuds. The Chef explained each dish and engaged in conversation with us but not to the point where it interfered with our conversation.’
