Validation Dinner: Chris Ziolkowski

Congratulations to chef Chris Ziolkowski on his successful validation by the La Belle Assiette Jury!

Congratulations to chef Chris Ziolkowski on his successful validation dinner. His validation took place on the 17th of June in London. The role of the jury members was to try the private chef dining experience and evaluate the menu prepared by the chef.

Chris is a young and energetic chef and restaurateur with over 15 years of experience in various establishments. He’s learned his skills from classically trained chefs in 5 star hotels and many top London restaurants. After a successful career in Caprice Holdings, Drake and Morgan and Rocket restaurants he has opened his own private catering and events company. Chris’s cooking style is modern and vibrant. He’s fond of adding his own unique touches to the classic French and Mediterranean cuisine. Chris cooks only organic, free range and ethically sourced produce from local London’s farmers markets. He offers modern continental menus, traditional French and British cuisine, cooking and cocktail masterclasses food and wine pairing courses.

Trio of starters

Smoked beetroot pate with caramelized chilli pecan nuts, shallot marmalade and wholegrain pita bread

Tofu and spinach tortellini with vegan béarnaise sauce

Butternut squash and sundried tomato soup with crispy onions, sage and tarragon

Main course

Cheese Saganaki with ratatouille and Pearl barley risotto

Trio of desserts

Medusa fruit salad with mango, pineapple, berries, mint and star dust

Avocado and lime sorbet baked Alaska

Coconut panna cotta with blueberry sherbet caviar

  • “We had a wonderful Father’s Day meal with Chris and La Belle Assiette. Chris created a delicious vegan menu especially for us, even taking the time to learn how to make vegan mozzarella and other vegan items that he hadn’t made before. I am still dreaming of the vegan panacotta that he made for us. We had three children as part of our party and he added some lovely little touches to the meal which they enjoyed – eating dips from a filo basket and an edible bowl filled with fruit were the highlights for them. Even my picky eater ate some dishes that he’s never tried before. This was top quality food and Chris and his team were a pleasure to have around the house. They also left the kitchen cleaner than it was when they arrived!”

Chris created an exceptional meal for his Validation Dinner. Each dish was perfectly cooked, and the special touches he included made the meal even more special. His range of culinary experience shone through and he was an absolute pleasure to host.
