Congratulations to chef Bonita De Silva on her successful validation dinner. Her validation took place on the 5th of September in London. The role of the jury members was to try the private chef dining experience and evaluate the menu prepared by the chef.
Here is a chef whose passion is to make delicious, plant-based food. Bonita De Silva has worked for the past 8 years as a professional chef in several notable restaurants around London. After turning vegan 4 years ago she has focused her attention on making mouth-watering plant-based dishes that rival it’s meat competitors. Her inspiration come from travels across India and the Middle-East as well as working in high-end gastro pubs around London. She loves making food that brings people together to share and enjoy around the table.
Butternut Squash, Red Lentil and Coconut Soup with a Sweetcorn Fritter and Sweet Chilli Jam
Courgettes with Garlic and Chilli, Baked Butterbeans, Burst Tomatoes, Olive Oil Pitas and Roasted Garlic Aioli and Gremolata

“Bonita was friendly, warm and professional from the start. She provided much contact prior to the evening, explaining the menu and ensuring it was suitable. On the evening, she provided some of the best vegan food I’ve had and talked us through the menu, whilst maintaining being super friendly and lovely. I particularly loved the fact she utilised locally grown, seasonable vegetables. It truly was amazing!”
Bonita created a fantastic meal for her Validation Dinner. Each dish was beautiful and unbelievably tasty. She was a pleasure to host, and her food was a pleasure to enjoy.
