Validation Dinner: Adam Blanchard

Congratulations to chef Adam on his successful validation by the La Belle Assiette Jury!

Congratulations to chef Adam Blanchard on his successful validation dinner. His validation took place on the 7th of September in Nottingham. The role of the jury members was to try the private chef dining experience and evaluate the menu prepared by the chef. 

The Chef

Adam grew up around food with his dad being a well known chef in Bournemouth on the south coast. He started cooking at his dads restaurant from the age of 14 and decided he wanted to make a career of it for himself. At the age of 17, Adam moved to London to work at the internationally acclaimed Claridges Hotel where he did his apprenticeship and remained for 8 years working up the ranks. This gave him a great foundation of classic cooking but with the modern expectations London expects from its catering scene.

A huge highlight for Adam was to get to cook alongside Rene Redzepi and the Team of NOMA during the London Olympics when they did a pop up restaurant at Claridges. Since Claridges, Adam was head chef at a hugely successful catering company in Surrey before moving to Nottingham to bring his experiences and skills to a new challenge further up the country. With experience of large volume banqueting and fine dining Adam really does have a well rounded experience of catering for any situation.

The Menu

Amuse bouche
Tomato consomme

Salmon gravelax with pickled vegetables, lemon caviar, dill and coffee dressing

Butter poached chicken, truffled celeriac puree, kale, goatsbutter infused celeriac and chicken reduction

Apple crumble with calvados ice cream

“An amazing evening and experience. Our chef Adam Blanchard cooked incredible food and explained all the dishes in detail, with great humour and made everyone feel very comfortable. I’ve never had food like it, what a chef!”

“Adam cooked for us last night and it was amazing. We eat out a lot so have high standards which were exceeded. We ate food that we’ve never tried before (salmon with coffee dressing) and everything was cooked perfectly. Adam was really friendly and easy to talk to. We were concerned that having a stranger cook for us at home may be awkward but it was great. We’ll definitely be using this service again.”

Adam created a fantastic meal for his Validation Dinner. Each dish was beautifully presented and his wealth of experience shone through. He was an absolute pleasure to host.
