In December 2014 an EU law was passed requiring restaurants to list the presence of 14 allergens in their menus, including gluten, fish, milk, nuts, celery, and mustard. While some have embraced the new legislation, designing special menus for food allergy sufferers, others have said it hampers creativity and spontaneity, with over 100 chefs writing to the Telegraph to attack the new law. In the UK, about one or two people out of every 100 have a food allergy, with food intolerance being more common. A food allergy is a potentially serious response to certain foods, often triggering symptoms such as a rash, wheezing and itching. Fish, shellfish, nuts, and dairy are common allergens. Food intolerances, such as to lactose or gluten, are more common, with symptoms ranging from bloating, to stomach cramps and nausea.
