Chef Rachel Meaden is our 334th validated chef! Her validation dinner took place on 27th November in Bournemouth.
As with every validation dinner, La Belle Assiette invited 8 guests to take part as the jury. Their role is to experience a private chef dining experience and evaluate the menu prepared by the chef.

“Our chef for the night was Rachel Meaden, she arrived with everything she needed to ensure we had a good night, from plates to food everything was taken care of. Rachel started by preparing Canapés for the arrival of our 6 guests, these when down very well and tasted amazing leaving everyone looking forward to our starters, whilst we sat around the table enjoying some wine Rachel served up our starters, these were Chicken Liver Parfait with melba toast & fig & marrow chutney, everyone absolutely loved these which tasted fantastic. After a couple more glasses of wine Rachel brought over our main courses, this was Italian chicken – with pancetta, olives & basil in a rich tomato sauce served with baby herb potatoes and broccoli & green been medley again it was cooked to perfection and a couple of our guests were hounding Rachel to give them her recipe which she gladly did ! Finally it was time for dessert, this consisted of Lemon & chocolate pots with a raspberry coulis and it was amazing Rachel did a splendid job of preparing 3 delicious courses and even cleared away all of the dishes leaving the kitchen looking brand new. All in all the whole experience was a delight, we got to enjoy an evening with friends with out any of the hassle of cooking, serving cleaning up leaving us to have a fun filled night. I would recommend this to anyone looking to hold a diner party, after all why should nt you also enjoy the night!” Ross
Chef Rachel Meaden created a mouth-watering menu for all the guests to enjoy. From starter to dessert her attention to detail was spot on and the flavours all paired beautifully. The timing between dishes was perfect, creating a great flow for the evening. Rachel’s warm and friendly personality and calmness in the kitchen made everyone feel comfortable. She was happy to share cooking tips and advice which made the evening even more special. It is clear that Rachel has refined her cooking and is a master of the kitchen, making everything seem effortless. She was extremely professional but also friendly making all the guests feel very at ease. It is for these reasons that she is labelled ‘validated by the jury’! Congratulations.
