Javier Cerventes is our 119th Validated Chef by the Jury. His Validation Dinner took place in London, on Sunday, 26th of October.
As for each Validation Dinner, La Belle Assiette gave the opportunity to 8 guests, providing a jury, participate and evaluate the menu prepared by the Chef.
Javier Cervantes gained his first diploma in culinary arts at the Escuela Hoffman in Barcelona. With this on his hand, he moved to London where he has carried the extent of his professional career. First, working at Browns Hotel followed by Les Ambassadors Private Club. Afterwards Javier moved into corporate hospitality working for the boarding rooms of Blue Chip companies in the heart of London. Over the recent years, he has become a freelancer and offers his expertise to different establishments, corporate boarding rooms and small private events. He runs cookery and patisserie workshops at the Divertimenti Cookery School in Knightsbridge, London and their themes include Spanish and other Mediterranean Tapas, Patisserie Master Class and Chocolate workshops. Seen over the last 18 years, Javier observed with amazement how the path of his career has expanded into new facets of the culinary arts. His cooking is traditionally meanwhile incorporating new modern elements from different cuisines.

Chef Javier Cervantes has a great style and a very professional attitude. Taking care of all the details, the Chef delivered a generous and tasty cuisine inspired by Italian influences: sunny flavors punctuated by unexpected discoveries. The dessert is undoubtedly Javier’s strong point: he proposed a delicious and refined hazelnut Shortcake. Plus, Javier loves what he does and he shows it in his dishes: generous and passionate, he is anxious to offer as aesthetic and tasty dishes. Thus, the Chef is labeled “Chef validated by the Jury.” Congratulations!
