He is passionate about cooking South East Asian and Japanese street food, his latest project is a Korean-Mexican street food company. He loves the balance of flavours, the use of fresh ingredients and the respect and time given to the art. His main focus is Thai and Korean food, but he is also familiar with Indonesian, Japanese, Vietnamese, Laos and Cambodian food having visited the aforementioned in the past and partaken in various cooking classes/experiences.
